Its that time of year when the temperatures drop and the thought alone of going outside gives you the chills. Prepare this healthy soup to warm your soul and your body.
- 8 cupsChicken broth
- 1 Head of cauliflower (Chopped)
- 1lb Chicken (fresh or frozen)
- 1 cup Diced celery
- 1 cup Sliced butternut squash
- 2 tbs Dried parsley
- 1/2 tsp Dried Thyme
- 1/2 tsp Onion salt
- 1/2 tsp Garlic salt
- Pinch Pepper
Other optional ingredients:
- Red Pepper (or pepper flakes)
Add in serving of rice pasta before eating.
Place all of the ingredients in a crockpot. Cover and cook on low for 8-12 hours, or on high 4-6 hours. (Note: Chicken should fall apart easily after cooking, if you want you could also shred chicken with two forks breaking it up in the crockpot. In addition, the cauliflower should completely break down to form a thick creamy soup. You can always help break down any remaining chunks with the back of a spoon.)
Stir to incorporate everything and season with pepper and parsley as desired. Spoon a portion of soup in a bowl, prepare a serving of noodles and add in. Enjoy!
