When the weather turns cold, nothing beats a warm, creamy chicken soup. This version skips heavy cream and instead uses cauliflower to create a naturally thick, nutrient-dense base. It’s hearty, high in protein, and perfect for staying on track with your Muscle Mastery method meal plan. 

Ingredients

Main Ingredients 

  • 8 cups chicken broth
  • 1 Head of cauliflower (Chopped)
  • 1lb Chicken (fresh or frozen)
  • 1 cup Diced celery
  • 1 cup Sliced butternut squash
  • 2 tbs Dried parsley
  • 1/2 tsp Dried Thyme
  • 1/2 tsp Onion salt
  • 1/2 tsp Garlic salt
  • Pinch Pepper

Optional Add-Ins: 

  • Kale
  • Spinach
  • Mushrooms
  • Red Pepper (or pepper flakes)
  • Celery

Add in serving of rice pasta before eating.

Instructions 

Place all of the ingredients in a crockpot. Cover and cook on low for 8-12 hours, or on high 4-6 hours. (Note: Chicken should fall apart easily after cooking, if you want you could also shred chicken with two forks breaking it up in the crockpot. In addition, the cauliflower should completely break down to form a thick creamy soup. You can always help break down any remaining chunks with the back of a spoon.)

Stir to incorporate everything and season with pepper and parsley as desired. Spoon a portion of soup in a bowl, prepare a serving of noodles and add in. Enjoy!
