Ingredients

  • 1 lb chicken breasts, cut into bite size pieces
  • 1/4 cup lime juice
  • 1 tbsp @FeastMode tequila lime
  • 1 tsp garlic salt
  • 1/2 tsp salt
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tsp chili powder
  • 1/4 cup fresh cilantro, finely chopped
  • 2 tbsp sweetener

Optional Dipping Sauce 

  • 3/4 cup plain fat-free Greek yogurt
  • 1/4 cup fresh cilantro, finely chopped
  • 1 tsp Feast Mode Tequila Lime
  • 1/4 tsp salt
  • 1/8 tsp pepper

Instructions

  1. Place all of the ingredients in a ziplock bag (or a large bowl), and toss chicken in marinade to combine. Refrigerate for at least 10 minutes, or longer. (The longer you marinate it, the more flavor the chicken will have.)
  2. To Make the Optional Sauce: Place everything for the sauce in a blender or food processor, and blend/pulse until smooth. (Or you can simply stir everything together, just be sure to chop cilantro very fine). Keep refrigerated until ready to serve.
  3. Place chicken on skewers (if using wood be sure to soak in water first). Cover baking pan with foil, spray lightly with cooking spray. Place skewers on the pan (do not overlap). Bake at 450 degrees for 10 minutes, turn over once. Bale for 10-15 minutes longer (20-30 minutes maximum of baking time total depending on size of chicken chunks).
  4. Serve with a lime wedge and sauce, if desired.

Note: You can make this recipe without the skewers as well.
