This Cajun-inspired Jambalaya is packed with lean chicken, shrimp, and nutrient-dense veggies—perfect for fueling muscle building over 40 or anyone chasing long-term results with the Muscle Mastery method. 

Ingredients

  • Cooked Rice or quinoa⁣
  • 1 Yellow Onion, Chopped⁣
  • 1 Red Bell Pepper, finely chopped⁣
  • 2 Stalks Celery⁣
  • 1 Tbsp coconut oil ⁣
  • 1 can (28 oz) Diced Tomatoes⁣
  • 2 Chicken Breasts, diced⁣
  • 2 cups Chicken Broth⁣
  • 1/2 tsp dried Thyme⁣
  • 2 tsp dried Oregano⁣
  • 1 Tbsp Cajun seasoning⁣
  • 1 pound Shrimp⁣

Instructions 

  1. Cook onion, bell pepper, & celery in 1 Tbsp Coconut Oil in large pot until onion is translucent.
  2. Add tomatoes, chicken breasts, chicken broth, thyme, oregano, cajun seasoning.
  3. Simmer for 35 minutes.
  4. Add shrimp 3-5 minutes before serving, cook until shrimp is pink. Serve measured amount of protein over measured amount of rice.
  5. Add as much broth and veggies as you’d like.
