Ingredients
- Cooked Rice or quinoa
- 1 Yellow Onion, Chopped
- 1 Red Bell Pepper, finely chopped
- 2 Stalks Celery
- 1 Tbsp coconut oil
- 1 can (28 oz) Diced Tomatoes
- 2 Chicken Breasts, diced
- 2 cups Chicken Broth
- 1/2 tsp dried Thyme
- 2 tsp dried Oregano
- 1 Tbsp Cajun seasoning
- 1 pound Shrimp
Instructions
- Cook onion, bell pepper, & celery in 1 Tbsp Coconut Oil in large pot until onion is translucent.
- Add tomatoes, chicken breasts, chicken broth, thyme, oregano, cajun seasoning.
- Simmer for 35 minutes.
- Add shrimp 3-5 minutes before serving, cook until shrimp is pink. Serve measured amount of protein over measured amount of rice.
- Add as much broth and veggies as you’d like.
