Ingredients

  • 1.25 lbs lean ground turkey
  • 1 cup (8oz) chopped fresh spinach
  • 1/3 cup fat-free crumbled feta
  • 1/4 cup finely chopped red onion
  • 1/4 cup chopped fresh parsley (or 1 tbsp dried)
  • 1/3 cup roasted red peppers in water, chopped
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp garlic salt
  • 1 tsp dried oregano

Directions 

  1. Prep the spinach: Chop spinach leaves. Place in a large in a large bowl.
  2. Mix ingredients: Add ground turkey, feta, red peppers, onion, and seasonings. Mix ingredients with spoon or hands, distributing all of the ingredients thoroughly.
  3. Cook: Heat skillet pan, over medium-high and spray with cooking spray. Brown meat mixture.
  4. Assemble wraps: Spoon cooked mixture onto large lettuce leaves, low-carb tortillas, or pita wraps.
  5. Top and serve: Top with a dollop of fat free plain Greek yogurt, tomatoes, red onion, and additional feta if desired! (Avocado or olives for fat).
