Ingredients

  • 40 g chocolate protein powder
  • 3 tbsp 100% cacao powder
  • 6 tbsp Truvia or sweetener that measures like sugar
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1/2 cup pumpkin purée
  • 1/4 cup egg whites
  • 1/4 tsp vanilla extract

For the Frosting (Optional)

  • 2 tbsp pumpkin purée
  • 2 tbsp 100% cacao powder
  • 1 tbsp 2 tbsp Truvia or sweetener that measures like sugar
  • 2 tsp sugar free chocolate syrup
  • 1/4 tsp vanilla extract

Instructions

  1. Preheat oven to 325 degrees F.
  2. Whisk together dry ingredients (through salt) into a mixing bowl.
  3. Mix in wet ingredients (through vanilla extract) to make a thick batter.
  4. Lightly coat two 4” ramekins or Pyrex bowls with cooking spray.
  5. Divide batter between bowls.
  6. Bake for 25-35 minutes until a toothpick or knife inserted comes out clean.
  7. Set cakes aside to cool and combine frosting ingredients.
  8. Spread frosting between cake layers, then frost top and sides with remaining frosting.
