Pumpkin Spice Pancakes

1/4 cup Pumpkin puree
2oz Egg whites
1/4 cup protein powder
1 tbs Sweetener of choice
1/2 tsp Baking powder
¼ tsp Pumpkin pie spice (optional)
1/4 tsp Salt
1/2 tsp Ground cinnamon

Preheat griddle or skillet over medium low heat and spray with cooking spray. Mix everything together in a medium bowl until smooth batter forms.
When griddle is warm, drop batter by large spoonfuls onto the prepared griddle and cook until pancakes are starting to bubble. Flip and cook until golden brown on the other side. Repeat with remaining batter. Top with sugar free syrup. Enjoy warm!
Note: when cooking with protein powder, you don’t want to use a Hydrolyzed protein.
