Creamy Cauliflower Soup

Ingredients:
2 (12 oz) bags Frozen cauliflower florets
1/2 cup Celery, finely diced
1 Small sweet onion, roughly diced
2 cups fat free Chicken or vegetable broth
1 cup water
1/2 cup non-fat plain Greek Yogurt
1 tbs Garlic, minced
1 tsp parsley flakes
1 tsp Onion salt (or powder)
1/2-1 tsp Salt (to taste)
1/4-1/2 tsp Pepper (to taste)

Optional Toppings
1/2 cup fat free cheddar, shredded
2 Chopped green onions

Directions:

Place all ingredients in the slow cooker. Cover and cook on high for 4 hours or on low for 8 hours.

Turn off heat and blend in a blender or use an immersion blender to puree soup to your liking. Add the seasonings to taste. Top with with optional toppings if desired. Enjoy!
