Garlic Cauliflower Mash
Ingredients:
2 Large heads of cauliflower
1 small sweet onion
1 tsp garlic salt
1/4 cup Parmesan cheese
4 oz Plain Non-Fat Greek yogurt
1/2 tsp Salt and pepper (or to taste)
Optional:
1 tsp chives
Directions:
Cut the cauliflower into florets and place into a large pot. Add enough water to the pot to cover the florets. Bring the water to a boil over high heat, then reduce the heat and simmer, covered, for about 10-15 minutes, or until a fork can easily pierce cauliflower. Once the cauliflower is tender, strain in a colander.
Meanwhile, add the onion and garlic salt to a small pan. Saute over medium heat until golden brown.
Add the onion garlic mixture to the large pot used to cook cauliflower, along with the yogurt and parmesan. Use a handheld mixer to whip the garlic, onions, cream cheese, and parmesan together. Add cauliflower to the pot and mix with mixer until everything is well combined and smooth. Enjoy!
