Pumpkin-Spiced Snicker Doodle

1 3/4 cups Oat flour (add oats to food processor till powder)
1/2 tsp baking soda
1/2 tsp cream of tartar
1 cup sweetener
1/2 tsp cinnamon
1/4 cup unsweetened apple sauce
1 tbsp agave or honey
1 tsp vanilla
1 large egg
3 packets of sweetener
1 tbsp pumpkin spice


Preheat oven to 375°F. Line two baking sheets with foil and spray with cooking spray.
Combine oat flour, baking soda, cinnamon and cream of tartar in a medium bowl, stirring with a whisk.

Combine 1 cup of sweetener and applesauce in a large bowl; beat with a mixer at medium speed until well blended. Add the agave, vanilla and egg; beat well. Gradually add the oat flour mixture to the sweetener mixture, beating just until combined. Cover and chill for 10 minutes.

In a medium bowl, combine 3 packets of sweetener with pumpkin pie spice, stir to combine. With moist hands, shape dough into 42 (1-inch) balls. Roll balls in sweetener/pumpkin pie spice mixture.

Place on baking sheet 2 inches apart. Press to flatten slightly.

Bake 375°F for 5-7 minutes
Let cool for 2-5 minutes before serving.
