Cheesy Cauliflower “Mac”
Ingredients:
1 Very large head of cauliflower (or 2 medium heads, about 8 cups of florets)
1 ½ cup Unsweetened almond milk (or fat free fat milk of choice)
¼ tsp Garlic salt
¼ tsp Onion salt
2 tbs Plain non-fat Greek yogurt (or fat free sour cream)
2 cups fat free Shredded cheese of choice (I use 1c ff cheddar, 1c ff Mozzarella)
1 tsp Yellow mustard (optional)
Pinch Salt, pepper
Instructions:
Wash cauliflower and cut into bite sized pieces. Microwave the cauliflower in a large microwave safe dish in 1 cup of water, covered with saran wrap poked with a few holes for steaming. Microwave for 5-7 min or until cauliflower is just starting to get tender. Drain in a colander, and place in a large bowl. (You can also buy 2 bags of frozen cauliflower in a microwave steamer bag, and steam according to package directions.)
Drain cauliflower and in the same pot add milk, mustard, and garlic salt and onion salt. Bring to a boil while whisking, then turn off heat. Immediately add shredded cheese and yogurt and stir until cheese melts and mixture resembles a creamy cheese sauce. Enjoy warm!
