Egg White Muffins
-18 oz liquid egg whites or egg beaters
-6 oz cooked turkey sausage, turkey bacon diced, lean ground beef or any protein you prefer.
-salsa, or fresh veggies
salt & pepper…to taste
Preheat oven to 400 degrees.
Line muffin tin with paper baking cups.
Mix chopped veggies, eggs and salt and pepper together in a bowl.
Spoon in 1/2 oz (about 2 tbsps) cooked turkey sausage (or which ever protein you chose) into the bottom of each baking cup.
Pour about 3 tbsp egg whites and veggies over protein in each cup. (they will rise)
Just a dash more salt & pepper over each cup (May even sprinkle with Parmesan)
Bake for 18 minutes.
Store in airtight container in fridge.
