Guilt-Free Lemon Poppseed Muffins

Ingredients:
1 1/4 cup oat flour
1/4 cup baking stevia
3 tbs protein powder
1 tsp Baking powder
1 tsp Baking soda
1 tbs Poppy seeds
1/4 tsp Salt
1 tsp Vanilla extract
1/4 cup sugar free fat free butterscotch pudding mix
1/4 cup Unsweetened applesauce
4 oz eggs whites or (MuscleEgg)
1/3 cup Lemon juice
Zest lemon (optional)

Directions:

Preheat oven to 350 degrees. Spray 12 muffin tins with non-stick cooking spray (or use muffin cups).

Place all of the dry ingredients in a mixing bowl and mix until combined. Add wet ingredients and mix until smooth batter forms.

Divide batter evenly between bundt cake pans, or muffin tins. Bake for 18-20 minutes, or until lightly golden brown on top, and toothpick comes out clean. Remove from oven, and enjoy! Store in fridge. Or freeze and pop in the microwave for 30-60 seconds for a healthy and convenient snack!
