Jumbalaya

Ingredients:

Cooked Rice or quinoa⁣
1 Yellow Onion, Chopped⁣
1 Red Bell Pepper, finely chopped⁣
2 Stalks Celery⁣
1 Tbsp coconut oil ⁣
1 can (28 oz) Diced Tomatoes⁣
2 Chicken Breasts, diced⁣
2 cups Chicken Broth⁣
1/2 tsp dried Thyme⁣
2 tsp dried Oregano⁣
1 Tbsp Cajun seasoning⁣
1 pound Shrimp⁣

Cook onion, bell pepper, & celery in 1 Tbsp Coconut Oil in large pot until onion is translucent.
Add tomatoes, chicken breasts, chicken broth, thyme, oregano, cajun seasoning. Simmer for 35 minutes. Add shrimp 3-5 minutes before serving, cook until shrimp is pink. Serve measured amount of protein over measured amount of rice. Add as much broth and veggies as you’d like.
